Chewy Macaroons: 31 Days of Simple Recipes: Day 9

Both Aisha and I are down with flu. Ugh!! So I'am posting another old recipe again...

This is my tribute to Nigella Lawson. The lady who inspired me to cook and helped me fall in love with cooking! This is the first recipe of Nigella I tried and am sure more than FIFTY (it's about hundred now) people have tasted my macaroons and loved them! (a bit of bragging :D)

The recipe is very simple and easy to remember. It can be had as dessert after a great meal or as snack with tea or coffee.

200 gms almond powder
200 gms caster sugar
2 egg whites
1/4 tsp cardomom powder
around 30-35 blanched almonds
rose water

Preheat oven to 200C and line a baking sheet with baking paper.
Mix almond powder, egg whites, caster sugar and cardomom powder either using a beater or knead with your hands, until it becomes dough like.
Dampen your hands with rose water, and make walnut sized small balls. Put them on the baking sheet, and press them a bit to make them patties. Make sure you leave space among the patties as they will increase in size while baking.
Stud the patties with a blanched almond and bake for 10-12 minutes.
They may look pale when done, but if they have turned golden around the edges, its time to take them out of the oven.
Take them out carefully using a spatula and let them cool for a bit. Store them in an air-tight container.

The macaroons are good for three days, but am sure you will finish it in a day's time :) Do share your views after trying the recipe!
