Today I would like to share with you the recipe for 'Egg Roast'. Please do not think this dish calls for 'roasting' eggs. ;) It's just what we Keralites call this dish - no idea why. OK, onto the recipe...
Five eggs (hard boiled and peeled)
Two medium size onions - halved and sliced thinly
Two tomatoes - diced or chopped
Two green chillies - seeded if you are worried about the heat
1 tbsp of ginger and garlic paste (chopped or crushed ginger and garilc would do)
1 tsp of garam masala powder
2 tsp of chilli powder
1 tsp of coriander powder
1 tsp of ground black pepper
A pinch of ground turmeric
2 tbsp of vegetable oil
Curry leaves or chopped cilantro (optional)
Add some water (let's say half a cup) and let the sauce simmer for few minutes - so that all the powdered ingredients cook well and you don't get a raw taste later.
Once the sauce is cooked and is thick enough, add peeled eggs.
Simmer for few minutes.
