Day 4: Egg Roast Recipe : 31 Days of Simple Recipes

Today I would like to share with you the recipe for 'Egg Roast'. Please do not think this dish calls for 'roasting' eggs. ;) It's just what we Keralites call this dish - no idea why. OK, onto the recipe...

Five eggs (hard boiled and peeled)
Two medium size onions - halved and sliced thinly
Two tomatoes - diced or chopped
Two green chillies - seeded if you are worried about the heat
1 tbsp of ginger and garlic paste (chopped or crushed ginger and garilc would do)
1 tsp of garam masala powder
2 tsp of chilli powder
1 tsp of coriander powder
1 tsp of ground black pepper
A pinch of ground turmeric
2 tbsp of vegetable oil
Curry leaves or chopped cilantro (optional)

In a sauce pan, heat the vegetable oil and saute onion, tomatoes, ginger, garlic and green chillies. You could add some salt to speed up the cooking process and get moisture out of onions quickly.
When onions and tomatoes look cooked (mashed up), add chilli, coriander and black pepper powders.
Add some water (let's say half a cup) and let the sauce simmer for few minutes - so that all the powdered ingredients cook well and you don't get a raw taste later.
Check your seasoning and add whatever you need.
Once the sauce is cooked and is thick enough, add peeled eggs.
Stir the eggs carefully so that it's coated with the sauce properly.
Simmer for few minutes.
Garnish with curry leaves or cilantro. You could add these herbs in the first step if you want to.

Tip - If you do not have any particular ingredient, do not give up. Try to find a replacement from your pantry or simply cook without it. You never know, it might taste even better!
