Mixed Noodles - A school luncbox idea for you: 31 Days of Simple Recipes: Day 13

I've been wanting to share this recipe for quite a while now. I wanted to do a step by step tutorial, but never got around it. Mainly because I make this dish for Talha's lunchbox early in the morning. And it's a mad rush then - get Talha ready, make breakfast for all of us, prepare Talha's lunch/snack box so and so forth. To top it all, all of us would be hungry and 'cranky'. So it's better to keep the camera away. ;)

What do you need?
A pack of Chicken flavoured Maggi noodles
1/2 an onion finely chopped
1 tbsp of ginger and garlic paste (or chopped ginger and garlic)
an egg
1/2 cup of shredded chicken (you could use chicken pieces from leftover curries)
1/4 cup of finely chopped carrots
1/4 cup of sweet corn
1/4 cup of finely chopped green beans
1/4 cup of frozen green peas
good quality soya sauce
ground black pepper
salt

Notes-
You could use any brand of noodles, doesn't matter
You could use any veggies you feel like, doesn't matter either
It is important that you finely chop carrots/beans/whatever veggies you are using. This is to ensure that they cook easily and quickly.

How to?
On a frying pan or wok, drizzle some vegetable oil and saute ginger garlic paste. After a minute add chopped onions. Saute. You have to be quick here. Break an egg into the pan and scramble quickly. Once its scrambled add some soya sauce (how much is upto you), ground black pepper and salt. Keep stirring. After a couple of minutes add your veggies. Mix well. Again, keep stirring. Add chicken pieces and mix well. Cover with a lid and let it simmer. Check frequently and stir so that it doesn't stick to the bottom. Once veggies are cooked you can take it off the heat.

Cooking noodles
Boil noodles in loads of water. Add some vegetable / olive oil so that noodles don't stick to each other. You could add the masala powder that comes in the pack. Once noodles are cooked, drain and add it to the above mixture. Stir and mix well. Let it simmer for a minute or two. That's all. It's yours to enjoy. :)
