Ramadan Journal 2013: Day 6: Workspace + A simple Grilled Chicken Recipe

Alhamdulillah, today was a very productive day. Talha and Aisha did some painting. They played together. Fought. Played again. Any day away from cartoons is a very productive day. 



This is how my work space looks like currently. Studio has a lot of natural light, which I love. 


I would like to share a recipe today. A quick, simple and healthy recipe that you could use for Iftar. I had a jar of Thai red curry paste that I had purchased to try out a recipe, which I never did. While searching for a grilled chicken recipe that used the paste, I came across this one and decided to give it a try. 


Talha and Aisha polished it off their plates. J will eat any chicken dish with his eyes closed. I loved the balance of sweetness of jaggery and spiciness of the red curry paste. Lovely combination.

Ingredients
1kg chicken - I used thighs
1/4 cup unsweetened coconut milk
2 tbsp Thai red curry paste 
2 tsp grated jaggery (or dark brown sugar)
Salt and freshly ground pepper

Method
Using a sharp knife, cut deep slits in the chicken and keep aside. 
In a bowl, whisk coconut milk, curry paste and jaggery until smooth. Add salt and pepper. 
Rub the chicken with the mixture making sure all parts are coated. 
Or put the mixture and chicken in an air tight container and shake well. 
Leave it for 20-30 minutes to marinate. 
Grill both sides on high heat. 
Serve with salad and bread.
