Chocolate beetroot cake with avocado frosting

I feel blessed and flattered when I receive comments and messages regarding my blog. They are just the motivation I need to keep this blog going.  That said, I feel worried when I receive messages from readers who call me a super mom or someone who manages everything so perfectly.

I worry because my objective with this blog was never to talk about how perfect everything in my life was/is. My life isn’t perfect. Neither am I.

You see this cake? A friend said it looked like a painting. It does look good, doesn’t it? But if you look closely, you will see that the frosting isn’t of the right consistency. I wasn’t patient enough to wait for it to chill. Why wasn’t I? Because A was watching cartoons and I knew I had ten or maybe fifteen minutes of quiet time. That little girl cannot sit still for long. I'am still learning to work around her active and wild spirit. 


If you are a chocolate lover, you would love this cake. But if you dislike beetroots, you wouldn’t eat it. J did the same after having a slice. And he is a chocolate cake fanatic!

There are chances that you won’t like this cake even if you loved chocolate and beetroot. I had to use dark chocolate as that is all I had in stock. T loves chocolate cakes and he doesn’t mind beetroots in there. But he couldn’t eat it as it was too bitter for his (almost six year old) taste.

A and I loved the cake and we had no issues. We ate our cake and made merry.


My life may look perfect in pictures. My children may look well behaved in photos. But they have their days and moments. I have my days and moments.

I do not have everything under control. I take each day as it comes. Most often, I wake up on the wrong side of the bed as I don’t get to sleep much (nothing to do with my children). I have had sleep issues since few years now. And that is one of the reasons why I run.

I’am not consistent with my running either. I have many bad days and few good days. My Instagram photos and recipes here may make you feel like I’am always eating healthy. I don’t. I binge on Papa John’s pizza and other unhealthy food quite often.

I may come across as a confident, talkative woman. Ask my friends and they will tell you how reserved and shy I was when they met me the first time. Or first few times. 

"Perfection' is man's ultimate illusion. It simply doesn't exist in the universe." This quote by David Burns is so true. None of us are perfect. Our lives, our family, our children, our work or ourselves. There is nothing perfect about anything. But that is what makes this world all the more beautiful, isn't it? What would be interesting in our lives if we were all the same and perfect

Cake recipe belongs to Jamie Oliver and can be found here. For avocado frosting, simply whip an avocado, icing sugar, couple of drops lemon juice and a tablespoon of milk together. I did not measure the ingredients but I'am sure you will find correct recipes online.
