Pumpkin and Roasted Pepper Soup

Dubai is quickly running out of winter. It rained a bit last night and according to weather forecast we can expect some ‘light rain’ in the next few days. We (Dubaiites) are more than happy with light rain, no matter how light it is. We love using rain as an excuse to stay in and have chai with pakoras. Or hot cocoa. Or soup. Okay, let’s have soup today.

Ingredients
300-400 grams of pumpkin
2 red bell peppers (yellow will do if you don't have reds)
1 carrot
1 stalk of celery
2 baby potatoes or 1 regular potato
4 cloves of garlic
1" ginger
2 tbsp butter
1-2 tbsp olive oil
Pinch of turmeric (Optional, but with all the therapeutic properties turmeric has, I would't skip it.)
Salt
1-2 tsp of ground pepper
2 cups chicken / vegetable stock
Chilli flakes



Method
Brush peppers with some olive oil and roast until charred at edges. You could roast them in the oven or on stove top. 
While the peppers are roasting, get your veggies peeled and cut into chunks.
In a saucepan, heat butter with olive (or canola) oil. Once the butter melts, add garlic and ginger. Sauté for few minutes.
Once they are browned, add celery, carrots, potatoes and pumpkin chunks. Season with turmeric, salt and pepper. Stir for couple of minutes.
Add the stock and wait for it to boil and when it starts to, reduce heat and simmer for about 15-20 minutes or until the veggies are cooked. Take off heat.
Seed and chop roasted peppers when they are cool enough to handle and add them to the soup.
Puree with immersion blender until smooth.  
Serve with chilli flakes or seasoning.

    1. You can get both here. Or you can make your own stock. ;)

      If you are using cubes, just add one to two cups of boiling water. Done.
